Physical goods keep us honest
Software that moves physical products cannot fudge its edge cases. Stock is either there or it is not, a courier either collected or did not, and a customer notices when the update is wrong.

We would rather ship eight screens that get opened daily than forty that demo well. When something generalises beyond our own operation, it becomes a product. When it does not, it stays internal.
